Some notes on the New Year’s Eve appetizers
How many appetizers per guest? A good general rule is to plan for 3-5 appetizer bites per person per hour. If the appetizers are meant to be the main food source, you should increase that amount to 8-10 bites per person for the first hour.
The buffalo chicken meatballs and cheesy meatballs are very versatile. They can be served on a hoagie, or, in this case, an appetizer. When using them as an appetizer they should be made smaller. They can be served 3 on a skewer or individually with a toothpick on a large serving tray. Ranch or hot sauce make great dips to serve with the meatballs.
The zucchini and mushroom roll ups can be served by placing 1-2 on a small plate. This will help keep things neat and tidy. The same can be done with the pepperoni bread. Pre-slicing the bread will help keep serving from getting awkward. You can also serve my honey Sriracha pizza!
