  5. Portion the Dough Divide the mixture into nine equal portions within the muffin tins. I use a #20 scoop. I feel it works best with portion control and is less messy.
  6. Bake Place in the oven for 8–10 minutes. Use a toothpick to check the center, if it comes out clean, they are ready.

Troubleshooting the Keto Cheddar Biscuits

  • Soft cream cheese Ensure your cream cheese is truly softened at room temperature. If it is too cold, you will end up with small lumps in your biscuit dough.
  • Don't overmix Once you add the almond flour, mix just until the white streaks disappear to keep the texture light.

Ingredients

  • 1 ½ cups almond flour
  • 2 eggs
  • 1 cup cheddar cheese
  • 4 ounces of softened cream cheese
  • 4 tablespoons of melted butter
