Easy Buffalo Chicken Meatballs Recipe

Easy Buffalo chicken meatballs are great for game day or any day. This easy chicken meatball appetizer comes together in just one bowl and is ready to bake in minutes. You are in for a quick preparation and a delightful treat, with the meatballs finished baking in just 20 minutes, making them perfect for a flavorful, high-protein snack.

What You WIll Need:

  • 2 pounds of ground chicken
  • 2 cups of shredded cheddar cheese
  • 1 large egg
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • your favorite hot sauce

Combine the meatball ingredients 

This couldn’t be any easier. Just place the chicken, cheese, egg, and spices in a large bowl and mix them up until well combined. I usually use my hands but you can use a spoon if you like. If you plan on making the meatballs later just cover the bowl and place it in the fridge.

Rolling out the meatballs

I usually get my hands wet before I start rolling out the Buffalo chicken meatballs.  This way the meatballs do not stick as much. I usually roll them out to the size of golf balls but you can roll them out to whatever size you like. I get about 15 meatballs out of one recipe. If you make any more or less, you will want to adjust your cooking time. Place the meatballs, as you roll them, on a lined baking sheet. You can cover them and put them in the fridge until you are ready to bake them. Bake them at 375 degrees F for 20 minutes or until the internal temperature reaches 165 degrees F.

Serving the meatballs

There are many options for serving the Buffalo chicken meatballs. If they are being served as an appetizer, they can be served on a plate or serve three or four on a skewer with hot sauce. A meatball sub with hot sauce, lettuce, and ranch or blue cheese dressing is also an option.
