Easy Ten Minute Ham Cheesy Eggs Recipe

The easy ten minute cheesy eggs recipe is a quick kid friendly breakfast! It’s a great low carb breakfast too! My son and daughter (and our dog Penny) love them! It is a quick breakfast recipe that they liked when they were home and needed to get out the door to school. A quick and easy breakfast recipe that can be adapted to your family’s favorite cheese, meat, or veggie! The cheesy eggs are like scrambled eggs but more cheesy and creamier. They do not get as tough or solid as scrambled eggs. When you make this recipe you are half way the make ahead breakfast burrito recipe!

The ingredients for the cheesy eggs

The basic ingredients to the cheesy eggs are eggs, shredded cheese, milk, and salt and pepper to taste. The rest is up to you. I have included ham with the attached recipe but you can include or omit what you would like (other than the basic ingredients) to meet your needs. I have used heavy cream, half and half, milk, and almond milk in this recipe. They have all come out just fine. The best shredded cheese to use, in my opinion, is monterey jack. Monterey jack cheese is a great melting cheese. However, you can use whatever cheese you like!

Making the eggs

Whisk the eggs and milk together in a bowl. Melt the 1 1/2 tablespoons in a pan over medium high heat. When the butter is melted and bubbling, add the ham. Cook the ham at the same medium high heat for 1-2 minutes. Next, turn the heat to medium and add the eggs and gently move the eggs around until they start to come together. Refer to the video below to get an idea what to do.

After about 2 minutes, add the cheese and continue to mix until you see the eggs becoming slightly more solid. The eggs will be creamy and cheesy. They will not be the usual solid scrambled eggs. When the eggs become slightly more solid, take them off the heat and cover. Let set for about a minute before serving. If the eggs are too creamy for your liking then just cook them a touch more.
