Ingredients

  • 1 ½ tablespoons of butter
  • 5 eggs
  • ¼ cup of milk
  • 5 ounces of monterey jack or your favorite cheese
  • 5 ounces of diced ham
  • Sea salt and pepper to taste

Equipment

  • 1 skillet

Method

  1. Whisk the eggs and milk together in a bowl.
  2. Melt the 1 1/2 tablespoons in a pan over medium high heat.
  3. When the butter is melted and bubbling, add the ham. Cook the ham at the same medium high heat for 1-2 minutes.
  4. Next, turn the heat to medium and add the eggs and gently move the eggs around until they start to come together.
  5. After about 2 minutes, add the cheese and continue to mix until you see the eggs becoming slightly more solid. The eggs will be creamy and cheesy. They will not be the usual solid scrambled eggs.
  6. When the eggs become slightly more solid, take them off the heat and cover until serving.
