Easy Ten Minute Ham Cheesy Eggs Recipe

Tired of tough, dry scrambled eggs? Our easy ten minute ham cheesy eggs recipe is your delicious solution, packed with creamy, cheesy flavor. It’s a great low carb breakfast you can adapt to your family’s favorite cheese, meat, or veggies. You are in for a quick preparation that gets a satisfying, comforting meal on the table in about 10 minutes. When you wake the eggs, you will be halfway to my make ahead breakfast burritos recipe!

What You Will Need:

  • 1 1/2 tablespoons of butter
  • 5 eggs
  • 1/4 cup of milk
  • 5 ounces of Monterrey jack or your favorite cheese
  • 5 ounces of diced ham
  • sea salt and pepper to taste

Optional Ingredients for the Cheesy Eggs

The basic ingredients to the cheesy eggs are eggs, shredded cheese, milk, and salt and pepper to taste. The rest is up to you. I have included ham with the attached recipe but you can include or omit what you would like (other than the basic ingredients) to meet your needs. I have used heavy cream, half and half, milk, and almond milk in this recipe. They have all come out just fine. The best shredded cheese to use, in my opinion, is monterey jack. Monterey jack cheese is a great melting cheese. However, you can use whatever cheese you like!

Making the Eggs

Whisk the eggs and milk together in a bowl. Melt the 1 1/2 tablespoons in a pan over medium high heat. When the butter is melted and bubbling, add the ham. Cook the ham at the same medium high heat for 1-2 minutes. Next, turn the heat to medium and add the eggs. Gently move the eggs around until they start to come together. Refer to the video below to get an idea what to do.

After about 2 minutes, add the cheese and continue to mix until you see the eggs becoming slightly more solid. The eggs will be creamy and cheesy. They will not be the usual solid scrambled eggs. When the eggs become slightly more solid, take them off the heat and cover. Let set for about a minute before serving. If the eggs are too creamy for your liking then just cook them a touch more. The texture that is appropriate for you will be achieved after making this cheesy eggs recipe a few times.
