If you are using refrigerated Spiced Pork or Refried Beans, give them a quick 60-second zap in the microwave. This takes the chill off and ensures they are hot all the way through after the short baking time.
Preheat your oven to 400°F. Line a large rimmed baking sheet with parchment paper for easy cleanup.
Lay your flour tortillas flat on the baking sheet. Spread a generous layer of refried beans over one half of each tortilla, leaving a small border at the edge to prevent leaking.
Top the beans with the spiced pork. Sprinkle the shredded cheese evenly over the pork and beans.
Fold the empty half of the tortilla over the filling and press down gently to seal it. Lightly brush the tops of the tortillas with avocado oil. This helps them achieve that golden, flaky texture.
Bake in the preheated oven for 4 to 6 minutes. You are looking for the cheese to be fully melted and the edges of the tortilla to turn golden brown. Serve immediately with a side of Everything Sauce.
