Strawberry, Mango, & Pistachio Salad

This strawberry, mango, and pistachio salad will give you a burst of summer. The ripe strawberries, sweet mangoes, and rich pistachios paired with the coriander, lime, and mango dressing, will create a refreshing, zesty combo that is both vibrant and satisfying. It’s like a tropical vacation in a bowl and just a little bit fancy without trying too hard. Perfect for picnics, BBQs, Mother’s day, or when you just wanna feel like you’re lounging on a beach. This strawberry and mango salad comes together in about 30 minutes and is the kind of dish people ask you to bring to every summer gathering and potluck after they try it.

The mango and lime dressing for the salad

The dressing for the strawberry, mango, and pistachio salad just requires a blender or a food processor. Place the mango, lime juice, avocado oil, ground coriander, and sea salt and blend until smooth. The dressing doesn’t get super smooth unless you are using ripe mangoes such as a champagne mango. Champagne mangoes are less fibrous than red mangoes. The dressing is delicious either way and will spread just fine over the salad. If you are not a fan of coriander then feel free to cut back on the amount you use. This dressing recipe is very forgiving.

The strawberries and mangoes

The strawberries and mangoes can be sliced or diced as you wish. I cubed the mangoes and sliced the strawberries. The pistachios can be crushed or left whole, they are a great addition to the salad either way. The amount of strawberries, mangoes, and pistachios you add to the salad can be adjusted to your taste. This is a very flexible salad! I hope you enjoy the recipe!

What oils can I use for the dressing?

Grapeseed oil, avocado oil, canola oil or any other light oil. Olive oil may be a little overwhelming for the dressing.

Can I adjust the amount of coriander in the mango and lime dressing?

Yes. Everyone has different tastes so make the salad your own!

What kind of mango is best for making the dressing smooth?

From what I have found, ripe champagne mangoes make the dressing the smoothest.

Ingredients

Dressing

  • 2 cups of ripe diced mangoes
  • 2 tablespoons of lime juice
  • ¼-1/3 cup of avocado oil grapeseed oil, or any other light oil
  • 2 teaspoons of ground coriander
  • ½ teaspoon of sea salt

Salad

  • 1 cup of diced mangoes
  • 2 cup of sliced strawberries
  • 1 cup of chopped pistachios
  • 4 cups of salad greens

Instructions

  • Combine dressing ingredients to a food processor or blender and combine until smooth.
  • Layer salad ingredients and then add salad dressing.

Notes

The dressing is thick but spreads over the salad nicely.
