Ingredients

Dressing

  • 2 cups of ripe diced mangoes
  • 2 tablespoons of lime juice
  • ¼-1/3 cup of avocado oil grapeseed oil, or any other light oil
  • 2 teaspoons of ground coriander
  • ½ teaspoon of sea salt

Salad

  • 1 cup of diced mangoes
  • 2 cup of sliced strawberries
  • 1 cup of chopped pistachios
  • 4 cups of salad greens

Instructions

  • Combine dressing ingredients to a food processor or blender and combine until smooth.
  • Layer salad ingredients and then add salad dressing.

Notes

The dressing is thick but spreads over the salad nicely.
