Ingredients
2sweet potatoes peeled and cut to ½ inch cubes
½medium red onion sliced
3bell peppers sliced
2cupsgrape or cherry tomatoes
1poundbrussels sprouts cleaned and halved
6ouncesbanana peppers
¼cupof olive oil
1teaspooncracked black pepper and sea salt
1tablespoongarlic powder
1pounditalian sausage
Instructions
Line a large baking sheet with parchment paper.
Layer sweet potatoes, onion, bell peppers, tomatoes, brussels sprouts, banana peppers, olive oil, and spices. (see notes)
After layering, mix to combine the ingredients.
On top of the combined ingredients, spread out the Italian sausage in thin pieces.
Bake at 400 degrees F for 25 minutes or until sausage reaches temp of 165 degrees.
Notes
When layering the vegetables, oil, and spices, you can either layer and mix on the sheet pan, or mix everything in a large bowl and then layer. Whatever is easiest for you.This is just a basic tray bake. You can use or omit whatever veggies you like. You can also omit the sausage!
