Peppermint Chocolate Chocolate Chip Sandwiches

The peppermint chocolate chocolate chip sandwiches are two recipes in one! A chocolate chip cookie recipe and a mint buttercream recipe! A great holiday recipe!

Ingredients

Chocolate chocolate chip cookie dough

  • 1 ⅛ cups melted butter (2 1/2 sticks)
  • ¾ cup cocoa powder
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups of unbleached flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of sea salt
  • 2 cups of semi sweet chocolate chips

Peppermint buttercream

  • 8 ounces sifted powdered sugar
  • 1-2 tablespoons milk
  • 1 stick butter room temperature
  • ¼ teaspoon of mint extract
  • ¼ cup crushed hard peppermint candies

Instructions

Chocolate Chocolate Chip Cookie Dough

  • Sift flour, baking soda, and salt together and set aside.
  • Combine melted butter and cocoa powder in a bowl and let set for 15 minutes.
  • In a mixing bowl or stand mixer combine butter mixture and both sugars. Mix until light and fluffy. Making sure to scrape down the sides and bottom of the bowl occasionally.
  • Next add vanilla extract and eggs. Combine well.
  • Add flour mixture and mix until just combined. Scrape down the sides and bottom of the bowl.
  • Add the chocolate chips. Mix with the mixer for a couple of turns and then finish mixing with a spatula by hand.
  • Let the dough mixture chill in the refrigerator for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Once rested, place one tablespoon of mixture two inches apart on a silicone baking sheet or parchment lined baking sheet. Bake for 12-14 minutes.
  • Let cookies cool a few minutes before transferring to a cooling rack.

Peppermint Buttercream

  • Add room temperature butter, mint extract, and vanilla extract and mix until combined and fluffy.
  • Add sifted powdered sugar a little at a time until combined. Add milk when needed to loosen up frosting.
  • Add broken peppermint pieces and mix by hand.
