Ingredients

  • 1 head of cauliflower cut into florets or a 1 pound bag of cut cauliflower
  • 2 tablespoons of olive oil
  • ½ teaspoon of sea salt
  • ½ teaspoon of cracked black pepper
  • cup honey
  • 2-4 tablespoons of sriracha depending on how hot you want it
  • ½ cup of ranch
  • 8 ounces of shredded monterey jack cheese
  • 1 pizza dough large enough to fit a sheet tray roughly 12 inches x 16 inches.

Method

  1. Cover cauliflower florets with olive oil, sea salt, and pepper. Bake on a lined baking sheet for 10 minutes at 350 degrees F.
  2. While the cauliflower cools, increase the oven temperature to 425°F
  3. Place baked cauliflower, honey, and sriracha in a bowl and mix until well combined. Tasting for your heat preference.
  4. Spread your pizza dough out on a lined baking sheet.
  5. Spread the ranch on top of your pizza dough.
  6. Spread cauliflower mixture evenly over the ranch. Sprinkle on monterey jack cheese.
  7. Bake at 425 for 8-10 minutes or until the dough is golden brown and cheese is melted.

Notes

  • Avoid the Soggy Bottom If you use a store-bought dough that is very cold, let it sit at room temperature for about 20 minutes before stretching. This prevents the dough from snapping back and helps it crisp up in the oven.
The College Budget Hack This is a great pizza for college students because you can use frozen cauliflower florets if they are on sale. Just make sure to roast them a few minutes longer to cook off the extra moisture.
