I heard about the arroz mamposteao recipe from a friend at work. He told me it was one of his favorite dishes. It is now one of mine!

Ingredients
Sofrito
1Spanish onion
1Large red bell pepper
2Medium plum tomatoes
1cupchopped cilantrostems and leaves
9cloves of peeled garlic
sea salt to taste
Mamposteao
4piecesof cooked bacon reserving 2 tablespoons of bacon grease
1teaspoonof sazon seasoning
½cupof sofrito
½cupof chicken stock
2 to 2 ½cupsof cooked rice
1teaspoonof sea salt
Method
Place all the sofrito ingredients into a food processor blender and combine until smooth.
Cut bacon into bite sized pieces. Place cut bacon and bacon grease into a large skillet with sazon seasoning and sofrito. Mix until well combined and cook for about 3-4 minutes on medium high heat.
Add broth and cook for an additional 4-5 minutes until a sauce is achieved.
Add rice and salt. Press rice evenly so it spreads over the bottom of the pan. Cook until the rice heats up and starts to become crispy. Then fold the rice with the so all ingredients blend together.
Adding about 1 1/2 to 2 pounds of smoked pork is an option to increase the flavor.Also optional are the beans. My family did not want them added and it tasted great.
