Ingredients

Sofrito
  • 1 Spanish onion
  • 1 Large red bell pepper
  • 2 Medium plum tomatoes
  • 1 cup chopped cilantro stems and leaves
  • 9 cloves of peeled garlic
  • sea salt to taste
Mamposteao
  • 4 pieces of cooked bacon reserving 2 tablespoons of bacon grease
  • 1 teaspoon of sazon seasoning
  • ½ cup of sofrito
  • ½ cup of chicken stock
  • 2 to 2 ½ cups of cooked rice
  • 1 teaspoon of sea salt

Method

  1. Place all the sofrito ingredients into a food processor blender and combine until smooth.
  2. Cut bacon into bite sized pieces. Place cut bacon and bacon grease into a large skillet with sazon seasoning and sofrito. Mix until well combined and cook for about 3-4 minutes on medium high heat.
  3. Add broth and cook for an additional 4-5 minutes until a sauce is achieved.
  4. Add rice and salt. Press rice evenly so it spreads over the bottom of the pan. Cook until the rice heats up and starts to become crispy. Then fold the rice with the so all ingredients blend together.

Notes

Adding about 1 1/2 to 2 pounds of smoked pork is an option to increase the flavor.
Also optional are the beans. My family did not want them added and it tasted great.
